Clean Food Challenge: Day 4

Thanks everyone who recommended snacks for me to try! I'm definitely going to try some out.

Today's meal: Dinner

Tonight, I made the homemade egg rolls I mentioned yesterday. They were great! This is, of course, another Pinterest find. But really, I was inspired by this recipe but than changed it to fit my needs.

BBQ Egg Rolls:

2 chicken breasts: cooked (I pan cooked with a little sesame seed oil) and finely chopped
Package of Egg Roll Wrappers: These were all natural, and perishable! Just an FYI you find them next to the bagged salad in the grocery store - I spent way to long looking for these.
Shredded Cabbage
Cilantro: finely chopped
Carrot: Shredded and finely chopped
Green Onions: Finely chopped
BBQ Sauce: I used my Dad's homemade sauce to keep it real
Salt/Pepper




Preheat the oven to 400. Combine the chicken and the BBQ sauce together to taste, salt and pepper to taste. I didn't use that much sauce, just enough to give the chicken some flavor. Combine the cabbage, cilantro, green onions, and carrots together.


Place chicken mixture on to egg roll wrapper. Then place cabbage mixture on top.

Roll the wrapper as instructed on the package. Bake at 400 for 15 minutes or until golden brown. I served them with white rice and steamed broccoli.
