Clean Food Challenge: Day 7

Well, I've made it to the end of the clean food challenge. It was a very interesting week. This challenge was very challenging when it came to snacks and lunch. Those are the times of day when I just want to grab something and go. I've learned that I rely entirely too much on snacks that come from a box.

For dinner, I really enjoyed eating clean. I can't speak for Morgan, my forced partner in this challenge, but I liked not eating a ton of junk at the end of the day (not that we really did to begin with). I also liked the variety of foods, which I will continue to work hard to incorporate.

I will also continue to try and eat as cleanly as possible for dinners. I also want to try harder to prepare for  snack time, instead of just grabbing whatever crap I have lying around. I need to take a Sunday afternoon and make some granola, or some homemade cookies. Then, at least, I'm still getting the calories I desperately need but without the chemical processed junk. Its a good goal to work toward.

Today's Meal: Dinner

Tonight for dinner we had chicken, homemade dumplings, and steamed carrots. The chicken was just a whole chicken that I put in the crock pot with some water, chicken base cube, olive oil, salt, pepper, fennel, paprika, and celery seed. I let it cook for 8 hours on low, and it was all ready for dinner. Easy peasy.



The dumplings are also super easy. To make:

1 cup flour
2 eggs
1/4 cup milk
Salt to taste
Chives to taste

Bring a pot of water (or soup or whatever you want to add the dumplings to) to a rolling boil. Mix all the ingredients together into thick dough. Place dough on a cutting board. Use a knife to scrape dumpling size bits of dough into the boiling water. Let boil until all dumplings have risen to the top of the pot. Serve. (I served with the chicken broth from the crock pot chicken as gravy).
